This dish starts with a rich mushroom and leek risotto made with umami-packed mushroom purée and roasted sliced button mushrooms. Nestled into the risotto is an Italian herb-marinated chicken breast topped with a knob of truffle-infused butter, which complements and enhances the earthy flavor of the mushrooms. On the side are black garlic-roasted green beans gilded with even more truffle butter.
